

Kayanoya Instant Chawanmushi Savory Egg Custard Soup
For preparation, all you need is 1 egg and 200 ml of lukewarm water. This Chawanmushi base allows you to enjoy the rich flavor of dashi without the hassle of making your own, offering a simple and delicious way to prepare Chawanmushi.
The rich bonito flavor extracted from Kayanoya dashi is paired with eggs in a perfect balance. To enhance this delicate taste, the ingredients are kept simple—yuba (tofu skin), dried shiitake mushrooms, and mitsuba.
How to Prepare:

Dissolve the Chawanmushi base in lukewarm water and let it cool.

Add the beaten egg to the mixture and stir.

Pour the mixture evenly into 2 heatproof cups and cover with lids.

Fill a pot with water to about half the height of the cups. Place the cups in the pot, cover, and steam: 5 minutes on high heat, then reduce to medium heat and steam for another 5 minutes. After turning off the heat, let it sit and rest for another 5 minutes.
Tip: It’s best to use a lidded container for a smoother, firmer texture, but if you don’t have one, aluminum foil can be used as a substitute.
