In the tea fields, tools such as yoshizu (reed screens) and shade cloth are used to block sunlight while the leaves grow. This shading process helps the leaves develop a vibrant green color and enhances their natural flavor and umami.

After harvesting, the leaves are steamed and then dried. Unlike other types of tea, they are not subjected to processes such as rolling. At this stage, the product is called tencha, and when this tencha is carefully ground in a stone mill, it becomes matcha.
